The food in the video above is called Janchi Guksu.
Janchi Guksu is Korean noodle dish, and although it looks simple on the outside,
The truth is not simple at all and it is a food that must be carefully prepared.
This is because the process of making the stock is a little complicated.
If you find it hard to make stock, you can go to the nearby mart and buy a separate stock.
The Janchi Guksu are based on the fact that they are eaten at festival in Korea.
In fact, in the past, this dish was served to guests at weddings and birthdays.
Since the food is not salty enough, people sometimes make the difference by adding kimchi.
When you put kimchi in the stock, the spicy and sour taste of kimchi is spread.
Then the ingredients of this dish are as follows.
noodles(somyeon) for 2 person
Broth: 1L water, dried anchovies, dried kelp, soy sauce and salt to taste
Topping: 1/3 zucchini or aehobak, 1/3 carrot, 2 eggs, salt to taste
Sauce(*optioanl): 2Tbs soy sauce, 1/2Tbs chopped garlic, 1/2Tbs sesame oil, 1tsp sesame seeds
1Tbs red pepper powder, 3~4Tbs chopped green onion or chives
Then, make the stock first.
Bring broth ingredients to a boil in a pot.
Once boiling, lower the heat to low, take out kelp.
Add a bit of soy sauce for color and season to taste with salt.
You can use this broth both hot or icy-cold in summer.
Next, make topping.
Julienne zucchini(aehobak) and carrot. And then stir-fry with salt.
Beat the eggs with salt, pour it on a pan and fry it in a thin sheet (jidan).
Cool the jidan completely and julienne.
Third, use plain noodles.
Add and cook noodles in boiling water.
For bouncy noodles, add cold water about 2~3 times whenever the pot overflows.
Rinse the noodles in cold water and drain.
Finally, In a bowl, serve noodles, broth and topping. done!
